Frico is the sunshine of the people of Friuli and it represents the soul of many areas of this land. It is an ever-present and iconic recipe, born in the 15th century, based on melted cheese, often enriched with potatoes, onions or other local seasonal ingredients. The two best-known interpretations of the recipe are the amber waffle, more or less thick and crispy, made only with mature cheese, and the one with potatoes, higher and softer on the inside, with a crispy crust on the outside. Other variations are found throughout the Region, from the simplest to the most elaborate, using a variety of more or less mature cheeses in their preparation.
